Too late for more hay?

I'd like to get in a 3rd cut. The grass+clover is border-line ready (if it was summer I'd wait a few weeks) and I could sure use the feed. However, I've heard that if the grass is mowed and doesn't have time to grow back some, it could be damaged by the cold (northern Vermont). Is this the case? Would it help to spread manure & used bedding as a mulch afterwards?
