NH high stubble shoes

Just wondering if the high stubble shoes go on just the outside edges two of them or do you use them on every pod? How long does it take to go from high stubble to normal shoes? Reason I ask thought about trying them on my orchard grass,but will need take them off when I'm doing alfalfa.
