Alfalfa question

As many of you know this is my first year haying my fields. They were seeded last year so I didn't really know what to expect. I am seeing a lot more alfalfa this second cutting. I don't know when the optimal time to cut alfalfa is. I read 10% bloom but I don't know what that means.
