Mature Triticale Options

Drilled fridge triticale into existing/weak alfalfa last fall. Now with all the rain it is pretty much completely mature. Just a little green left at the very bottom of the stems.

Question is will the grain heads pose any concerns as far as feeding to cows?

Also half thought about combining some seed off of it. Triticale is way taller than any thing else. Did not know if fridge tritical is a hybrid variety or if seeds would be any good?
