Help with alfalfa

I have a 5 acre spot of alfalfa.We cut it with a new holland 474 mower cond.it has circle c rollers in it. First question is it best to cut early in the morning? Also have a 144 nholland invertor to flip the hay . Is the best time to flip the hay the next day in the morning or late evening ? Normal weather how many days to you can bale ?
