Disc mower

This subject has probably been beat to death already but here goes. I have been mowing my hay the past couple of years with a MF sickle bar mower which worked pretty good. I replanted last fall with orchard grass. Now the mower clogs quiet often. Looking at used disc mowers but my question is about the cutting height. Every thing I read says "don't cut it too close" So how do you set the height on a disc mower other than tilting the disc with the center link? Thanks
